the size of the dough scraper depends on the application:
1. for large amounts of dough you need a large dough scraper to be able to work efficiently and so that your fingertips don't end up "in" the dough. by the way, you should never do that, otherwise the lumps on your hands will get bigger and bigger. tip: treat the dough as if it were red hot so your fingertips stay clean.
2. the dough scraper can be used to scrape out a bowl. the curves play a larger role. the dough scraper may not be large enough to clean countertops. you can't remove dough cleanly with sponges and washcloths anyway because everything sticks to it. therefore, first clean with the dough scraper, then clean the rest with the root brush.
